Ingredients

  • slices Dempster's Protein Bread (86g)
  • egg
  • cottage cheese
  • shredded cheddar cheese
  • grated Parmesan cheese
  • garlic powder
  • Pinch of salt
  • Pinch of freshly ground black pepper
  • (≈ 4 tbsp) marinara sauce

Instructions

  1. 1Preheat the oven to 400°F and set a wire rack over a baking sheet.
  2. 2In a small bowl, beat the egg, then stir in the cottage cheese, shredded cheddar, garlic powder, salt, and black pepper until well combined.
  3. 3Divide the mixture between the 2 slices of bread, spreading it evenly and leaving a small border at the edges, then transfer the slices to the wire rack.
  4. 4Sprinkle the grated Parmesan over the top.
  5. 5Toast on the wire rack at 400°F for 12 minutes, so air circulates under the bread and the base crisps.
  6. 6Broil for 2 minutes on high until golden and bubbly, watching closely so the Parmesan doesn't scorch.
  7. 7Cut each slice into 6 squares and top each square with about 1 tsp of marinara sauce.

Notes

Sub 30g or 3 tbsp egg whites for the eggs. Easier to divide if you only want 1 slice
