Ingredients

Maple Glaze

  • pure maple syrup
  • whole grain mustard
  • crushed red pepper flakes
  • small pinch of kosher salt

Salmon

  • small salmon fillets (about 100g each / 400g total), skinless
  • Black pepper, to taste

Instructions

  1. 1Preheat oven to 425°F. Position one rack in the upper third of the oven for broiling later.
  2. 2Whisk together the maple syrup, whole grain mustard, red pepper flakes, and a pinch of salt until smooth.
  3. 3Pat the salmon fillets dry with paper towels and arrange on a foil-lined sheet pan, spacing them apart. Season generously with black pepper.
  4. 4Spread the glaze evenly over the tops of all four fillets.
  5. 5Bake at 425°F for 8–10 minutes, until the salmon is nearly cooked through and reads about 135°F internally.
  6. 6Switch the oven to broil on high. Broil for 2–3 minutes until the glaze is caramelized and bubbling and the salmon reaches an internal temperature of 145°F. Watch closely — the glaze can burn quickly. Serve immediately.
